Sausages baked in crisp Yorkshire pudding batter with onion gravy and greens.
Ingredients
8 pork sausages
3 tbsp vegetable oil
140 g plain flour
4 eggs
200 ml milk
2 onions
1 tbsp plain flour
400 ml beef stock
300 g green beans
Method
Heat the oven to 220C (200C fan).
Whisk the flour (all but a spoonful, which is for the gravy), the eggs, milk and a pinch of salt into a smooth batter. Leave to rest for 10 minutes.
Put most of the oil and the sausages in a roasting tin and roast for 10 minutes, until the oil is very hot.
Carefully pour the batter over the hot sausages. Bake for 30 to 35 minutes, until risen and golden. Don't open the oven door for the first 20 minutes, or the batter may sink.
Meanwhile, slice the onions. Fry them in the rest of the oil over a medium heat for 15 minutes until golden.
Stir in the rest of the flour, then gradually add the stock. Simmer for 8 minutes until thickened. Season with salt and pepper.
Cook the green beans in boiling water for 4 to 5 minutes and drain.
Serve the toad in the hole with the green beans and onion gravy.
