Pork and Apple Casserole

Dinner 90 min Serves 4 Gluten freeDairy free

Slow-cooked pork with apples, leeks and potatoes in a cider-style stock.

Ingredients

Method

  1. Chop the onion and slice the leeks. Peel the potatoes and core the apples, then cut both into chunks.
  2. Heat the oil in a large casserole pan over a medium-high heat. Brown the pork in batches, so the pan isn't crowded, and move to a plate.
  3. Turn the heat down to medium. Add the onion and leeks and cook for 6 minutes until soft.
  4. Return the pork to the pan with the sage and stock. Bring to the boil.
  5. Cover, turn the heat down and simmer gently for 40 minutes.
  6. Add the potatoes and apples and simmer for 20 minutes more, until tender.
  7. Mix the cornflour with a splash of cold water until smooth. Stir it in and cook for 3 minutes until slightly thickened.
  8. Taste and season with salt and pepper before serving.
