Quick linguine with garlic, chilli, tomatoes and juicy prawns.
Ingredients
320 g linguine
2 tbsp olive oil
4 garlic cloves
0.5 tsp chilli flakes
250 g cherry tomatoes
300 g raw king prawns
1 lemon
15 g fresh parsley
Method
Defrost the prawns if frozen and pat them dry. Thinly slice the garlic, halve the tomatoes and chop the parsley.
Cook the linguine following the packet instructions. Save a mugful of the cooking water, then drain.
Meanwhile, warm the oil in a large frying pan over a medium heat. Add the garlic and chilli flakes and cook for 1 minute, without letting the garlic brown.
Add the tomatoes and cook for 4 minutes until softened.
Add the prawns and cook for 3 to 4 minutes, until pink all the way through.
Add the linguine with a splash of the cooking water, the juice of the lemon and the parsley. Toss well.
Taste and season with salt and pepper, then serve straight away.
