A stack of thick, fluffy pancakes with blueberries and maple syrup.
Ingredients
- 200 g plain flour
- 2 tsp baking powder
- 2 tbsp caster sugar
- 2 eggs
- 300 ml milk
- 30 g butter
- 150 g blueberries
- 4 tbsp maple syrup
Method
- Melt half the butter in a small pan and set aside.
- Mix the flour, baking powder and sugar in a large bowl.
- Whisk the eggs, milk and melted butter together in a jug.
- Pour the wet mixture into the dry ingredients and stir until just combined. A few lumps are fine.
- Melt a little of the rest of the butter in a non-stick frying pan over a medium heat.
- Pour in small ladlefuls of batter. Cook for 2 to 3 minutes, until bubbles appear on the surface and the bottom is golden.
- Flip and cook for 1 to 2 minutes more. Keep warm while you cook the rest, adding a little butter each time.
- Stack the pancakes and serve with the blueberries and maple syrup.
