Smoky chicken and peppers in warm tortillas with lime and soured cream.
Ingredients
500 g chicken breast
2 red peppers
2 onions
2 tbsp olive oil
2 tsp smoked paprika
2 tsp ground cumin
2 garlic cloves
1 lime
8 flour tortillas
150 ml soured cream
2 little gem lettuces
Method
Slice the chicken into thin strips. Deseed the peppers and slice them and the onions into strips. Peel and crush the garlic.
Put the chicken in a bowl with half the oil, the paprika, cumin, garlic and the juice of half the lime. Mix well to coat.
Heat a large frying pan over a high heat. Add the chicken and fry for 6 to 7 minutes, turning, until golden and cooked through with no pink. Tip onto a plate.
Add the rest of the oil to the pan with the peppers and onions. Fry for 8 minutes, stirring now and then, until soft and charred at the edges.
Return the chicken to the pan and toss everything together. Taste and season with salt and pepper.
Warm the tortillas following the packet instructions. Shred the lettuce and cut the rest of the lime into wedges.
Serve the filling with the tortillas, soured cream, lettuce and lime wedges, so everyone can fill and roll their own.
