Soft, bakery-style muffins bursting with blueberries. Makes 8.
Ingredients
- 250 g plain flour
- 2 tsp baking powder
- 120 g caster sugar
- 1 egg
- 200 ml milk
- 80 g butter
- 150 g blueberries
Method
- Heat the oven to 200C (180C fan) and line a muffin tin with paper cases.
- Melt the butter in a small pan over a low heat, then set aside to cool slightly.
- Mix the flour, baking powder and sugar in a large bowl.
- Whisk the egg, milk and melted butter together in a jug.
- Pour the wet mixture into the dry ingredients and stir until just combined. A few lumps are fine, as overmixing makes the muffins tough.
- Gently fold in the blueberries.
- Divide the mixture between the cases. Bake for 20 to 25 minutes, until risen and golden and a skewer comes out clean.
- Leave to cool for 5 minutes before serving.
