Spiced beef mince in crunchy taco shells with fresh tomato salsa, lettuce and cheese.
Ingredients
1 tbsp vegetable oil
500 g beef mince
1 onion
2 garlic cloves
2 tsp ground cumin
2 tsp smoked paprika
1 tsp dried oregano
1 tbsp tomato purée
8 corn taco shells
4 tomatoes
1 red onion
1 lime
15 g fresh coriander
2 little gem lettuces
100 g mature cheddar
Method
Finely chop the onion and crush the garlic. For the salsa, finely chop the tomatoes and red onion. Chop the coriander, shred the lettuce and grate the cheddar.
Heat the oil in a large frying pan over a high heat. Add the mince and fry for 5 minutes, breaking it up with a wooden spoon, until browned with no pink.
Add the onion and cook for 5 minutes until soft.
Stir in the garlic, cumin, paprika, oregano and tomato purée and cook for 1 minute.
Add a splash of water, season with salt and pepper and simmer for 10 minutes, stirring now and then, until the mince is saucy.
Meanwhile, mix the tomatoes and red onion with the juice of the lime, the coriander and a pinch of salt to make the salsa.
Warm the taco shells following the packet instructions.
Fill the shells with the mince, lettuce, salsa and cheddar and serve straight away.
