Simple one-tray salmon with crispy potatoes and green beans.
Ingredients
600 g baby new potatoes
4 salmon fillets
250 g green beans
1 lemon
2 tbsp olive oil
15 g fresh parsley
Method
Heat the oven to 200C (180C fan). Halve the potatoes and trim the green beans. Slice half the lemon and cut the other half into wedges. Chop the parsley.
Put the potatoes on a large roasting tray, toss with half the oil and roast for 15 minutes.
Push the potatoes to the sides and put the salmon in the middle of the tray. Drizzle with the rest of the oil, season with salt and pepper and lay the lemon slices on top.
Roast for 12 to 15 minutes, until the salmon flakes easily and the potatoes are golden.
Meanwhile, cook the green beans in a pan of boiling water for 4 to 5 minutes until just tender, then drain.
Scatter the parsley over the tray and serve with the green beans and lemon wedges for squeezing.
